Black Bean Soup & Savory Blintzes

Meal 1: Black Bean Bean Soup, Hand Cut Tortilla Chips, Live Cucumber Pickle Salad
• Warm the soup on the stove top. It’s also good chilled. Enjoy with the chips.
• The salad is best at room temp. Drink the brine – its probiotic!

Meal 2: Savory Blintzes with Ratatouille and French Lentils, Mixed Greens and Quinoa Salad
• Toast the blintzes, starting seam side down in a sauté pan with some butter. Cook 2-3 minutes. Flip, cook 2-3 minutes more. Serve.
• Serve the quinoa at room temp, dress the salad.
