Meal 1: Curried Summer Squash, Basmati Pilaf, & Grilled Flatbreads
· Heat the curry in a saucepan or microwave.
· Either heat the pilaf in a sauté pan with some olive oil, finishing with a dash of water to steam through, or in the microwave, or serve at room temperature.
· Toast the flatbread before serving.
· If you like, serve the rice and curry together in a bowl with a dollop of yogurt.
Meal 2: Black Bean Tamales, Sweet Corn Succotash, & Yellow Rice with Pepitas
· To heat the tamales, either microwave or place in a steamer basket and steam for about 15 minutes. If you do not have a steamer basket simply place a small bowl in the bottom of a sauce pot. Add about a 1/2” of water. Place a plate atop the bowl inside the pot so it is above the water. Place the tamales upon the plate and proceed to steam them.
· Sauté the succotash in a little oil or butter to warm it.
· The rice can be either heated or served at room temp.
· Serve the tamales with yogurt or sour cream and fresh salsa.
