Meal 1: Root Vegetable and Lima Bean Minestra (some w/ Lamb), Sautéed Tuscan Kale, and Five Grain Rolls
· Heat the Minestra in a saucepan. Thin with a little water while heating to obtain the desired consistency. Simmer for 5 minutes.
· Heat some oil in a pan over medium and then add some sliced garlic to the pan and cook gently for a minute or two.
· Add the kale and sauté until just wilted and bright green. You may add a splash of water to speed the process. Add a bit more good olive oil and serve immediately beside or atop the minestra.
Meal 2: Green Lentil Shepherd’s Pie, Mixed Greens, Mini Pumpkin Pies
· Heat the oven to 350°.
· Bake the shepherd’s pie until bubbly and the potatoes begin to brown – about 20 minutes.
· Dress the Greens as you like and enjoy.
· Warm the pumpkin pies or serve at room temperature. Garnish with real whipped cream spiked with dark rum for a real treat!

Hot Pots and Meat(less) Loaves

Meal 1: Eggplant Dumpling and Vegetable Hotpot with Sweet Potato Noodles
· Remove the dumplings from the container and reserve. Next remove the vegetables and reserve.
· On the stovetop, bring broth to a simmer. Add the noodles and return to a simmer.
· Next add the dumplings and allow to simmer 2 minutes.
· Add the vegetables and stir gently. Simmer 1 minute and serve with a ladle into bowls.
Meal 2: Meat or Meatless Loaf with Mixed Fall Greens and Tzimmus
· Heat the oven to 350°.
· Add a splash of water and perhaps some butter to the baking dish with the tzimmus and loaves.
· Bake until hot and bubbly, allow to cook 5 minutes more.
· Dress the Greens as you like and enjoy.

Meal 1: Fall Vegetable Curry with Chickpea Cakes and Masala Rice Salad
· Heat Curry in a saucepan allow to simmer for 1-2 minutes. Please remove whole spices if you see them and be aware of them while eating (i.e. star anise or all spice).
· Remove Chickpea Cakes, place on baking tray heat at 350 for 10 minutes.
· Serve Rice at room temperature or if you like heat along with the chickpea cakes, just remove the wax paper.
Meal 2: Ricotta and Sundried Tomato Stuffed Shells with Broccoli and Baby Lima Beans and Blue Moon Mix
· Heat the oven to 350° and warm shells until bubbly + 5 minutes (15-20 minutes)
· Serve Broccoli at room temperature.
· Dress Greens as you like.
