Chili and Calzones

Meal 1: Turkey or Veggie Chili, Chive Drop Biscuits, and Yellow Rice Salad
· Serve the rice at room temperature.
· Toast the biscuits in the oven to warm.
· Heat the chili on the stovetop or microwave and adjust the seasoning to your taste.

Meal 2: Spinach, Mushroom and Ricotta Calzones with White Bean and Tomato Salad
· Serve the salad at room temperature.
· For the Calzones:
1) Preheat your oven to 450° and allow the dough of the calzones to thaw, at room temperature, for at least 30 minutes before cooking.
2) Cut 3 short slits in the top of the calzones so they can vent while cooking (like a pie).
3) If you have a pizza stone use it. Allow it to heat with the oven for 20 minutes. Otherwise use a cookie sheet placed in the oven when it is hot and allowed to heat for 5 minutes.
4) Place the thawed ( or semi thawed) calzones carefully onto the baking surface and bake for approximately 10-12 minutes or until golden brown all over. Serve. Trivia: Hey! I thought you used local ingredients? Who’s growing tomatoes and chili peppers in April?
